LONGER CHEWING = INCREASED ENERGY ASSIMILATION | NUTALK NEWS




A July 14 panel discussion at the 2013 institute of Food Technologies (IFT) Annual Meeting & Food Expo® held at McCormick Place had Dr. Richard Mattes saying “Particle size has bio-accessibility of the energy of the food that is being consumed”. 




Basically speaking, the more you chew your food the greater the surface area available for enzymes to act on for enhanced digestion.
The professor of foods and nutrition at Purdue University, West Lafayette, Ind (Dr. Richard Mattes) also said, "The more you chew, the less is lost and more is retained in the body."
While sharing a recent study he made mention of the fact that, every person has his/her own chewing habits/pattern but proper chewing of foods will make us assimilate more energy from our foods.

Conference attendees acting as study subjects chewed almonds 10 times, 25 times or 40 times and their fecal fat and energy lost by the number of chews were measured. The study found with fewer chews, the larger particles were eliminated by the body. With more chews, the smaller particles were more readily absorbed into the system.

Talking on the eating of fruit, whole grains and vegetables he said, they placed high on the energy sources chart.
"When your total diet is higher in fiber, there's a greater loss of fat," Mattes said. "Fiber binds with fatty acids to create energy sources in the body."
Dr. Roger Clemens speaking at the discussion did acknowledge many variables can impact how efficiently the body extracts energy from plant-based foods or ingredients, especially those high in dietary fiber cereals and plant extracts, nuts and seeds.



Clemens added more study and understanding of the digestibility of plant-based foods and ingredients could contribute to more appropriate energy values and more accurate product labeling.

COUNSEL
The main bite you should ingest from this somewhat discussion is to increase the time food spends in your mouth. Chew longer to help your body rip the benefit of assimilating more energy from food and reduce the quantity of your bowels.
